How to make rice?

Since I have had my son (yes, I have a 2-year-old super active and naughty toddler running around my house) I have decided to learn cooking. I had to start at some point. So why not now. Today. Actually it was 2 years ago.

One of the first things I learned was – how do I make rice without having to spend any money on a rice cooker? Or without having a big blob of rice on my hands? I seriously do not like that. Rice is not supposed to be eaten like a big blob. In my opinion, each grain of rice should be cooked and not be stuck to its friend.

My grand ma who has been cooking since we was 8 years old (and today she is 95!!!) taught me this. At first she was shocked that I did not know how to make this but got over it fairly fast. She loves her grand kids but she knows better than to expect us to know or do any household chores. Yeah we were all raised like that – 5 rug rats she witnessed getting old.

Ok, so the recipe.

I know.

You will need:
– 2 cups of rice
– 6 cups of water
– Lemon juice – 3 -4 drops

– Soak the rice in 2 cups of water and keep aside for about 10 minutes.
– Put the remaining 4 cups of water in a big pot and set it to boil. [Handy tip – cover this pot with a lid. The water will boil faster and you will save some energy]
– Once boiling, add the soaked rice to it. Let the rice come to a boil. Stir occasionally.
– As soon as the rice starts boiling, add some lemon juice to it.┬áStir occasionally.
– Cook for another few minutes. Using a spoon, take some rice out on a plate and try to squish it with your finger. If you are able to do that without resistance, rice has been cooked. Warning – water and rice are both very hot at this point.
– Use a colander and strain the water out of the rice. I usually put this colander under running cold water (it stops the rice from cooking any further).

Use rice as needed. Enjoy!
